[Fredslist] For a Sweet New Year... Honey Cake

 In the spirit of Gotham - allow me to share the following, namely my Aunt
Jeanette's recipe for honey cake ­ if you want a sweet new year it's a good
way to start.

Feel free to pass it along but always credit Jeanette Scherl  Thau ­ she was
far more than sweet ­ when she died at 96 she was still a fashion maven
pining for her high heeled shoes ­ but she was a very classy, generous, wise
lady and a great baker.

As for my version - - I like mine sweeter than hers ­ I use her recipe but
leave out the nuts and cherries and add at least 1 more orange and 4 extra
oz of honey (I also don't bake it as long, but I have a convection oven) - -
Obviously, I like my new year extremely sweet (though I'm not always so
sweet myself)  ;).

To all ­ have a happy and healthy new year and may you be inscribed for
blessing in the books of life, health, prosperity, and given what is going
on in the worldŠ understanding.

Recipe is as follows:

Jeanette Scherl Thau's  Honey Cake......
 
20 ounces of honey
4 eggs
2 3/4 cups of sugar
3 cups of flour
2 oranges squeezed plus rind and juice
11Ž4 tsp.of baking soda
1/2cup of black coffee
1/2 cup of vegetable oil
walnuts and cheeries
 
Beat honey ...add eggs one at a time
add sugar slowly
add orange juice and rind
add black coffee
add baking soda to flour
alternate flour and oil to mixture
add walnuts and cherries[cut in 1/2]
 
put paper bag or parchment  paper in large pan even bigger than 9x13 if you
have one
grease with margarine and sprinkle with a little bit of flour
bake about 1 hr and 10  minutes at 350
